Attendance figures mislead. What matters is the peak: a half-time rush or a gates-open surge needs service points and staff sized for that moment, or the queue gives up and the sales never happen.
Permits and documentation decide whether you trade at all. Event food permits, insurance certificates and food safety records belong in the organiser's hands before the day, not in a folder in the van.
And setup has to be finished before the first person arrives. A stand still assembling as gates open loses the first hour, which is often the busiest one.
